Baked cod with ginger and lemon
Ingredients
Convert
28 oz cod fillets
2 tbsp olive oil
2 tsp ginger, fresh, peeled, grated
4 clove garlic, crushed
2 sprig rosemary, fresh, chopped
2 pcs lemon, raw, sliced or quartered
1/4 tsp salt, fresh ground
1/4 tsp black pepper, fresh ground
Preparation
Preheat the oven to 375°F .
Take two pieces of strong kitchen foil or parchment paper (roughly 10inch square each but fitted to your baking tray).
Place the first paper into the baking tray and brush it with the oil.
Season the cod fillets with salt and pepper then place them on the paper.
Add the garlic and ginger, patting them onto the fish flesh.
Drizzle with remaining olive oil then cover the fish fillets with the other parchment paper. Seal the edges by folding them.
Transfer the tray to the oven and bake for 15 minutes. For the last few minutes, uncover the fillets.
Remove from the oven and place aside for 5 minutes, then cover back the fillets to avoid drying.
Open carefully and serve immediately.
