Baked sea bass with vegetables and herbs

  • 2000 g sea bass, whole, gutted and scaled
  • 4 tbsp olive oil
  • 4 clove garlic cloves, peeled, whole
  • 4 pcs red bell pepper, seeeded and cut into chunks
  • 2 pcs yellow bell pepper, seeded and cut into chunks
  • 2 pcs tomatoes, cut into wedges
  • 1 pcs onion, cut into wedges
  • 4 sprig thyme, fresh
  • 2 sprig rosemary, fresh
  • 1 tsp salt, fresh ground
  • 1/2 tsp fresh ground pepper

  1. Preheat oven to 220°C.
  2. Place all of the vegetables into a roasting tray with the garlic cloves.
  3. Season, pour over 4 tbsp olive oil, and toss together.
  4. Roast for 20 mins until just soft.
  5. Pat the fish dry with kitchen paper, then slash the skin on both sides with a sharp knife.
  6. Season the inside of the fish and stuff half of the herbs.
  7. Place on top of the vegetables, drizzle with more oil, scatter with the rest of the herbs, then roast for 20-25 mins.
  8. Fish is done when it flakes easily.
  9. Serve while still hot.
