Beet and apple salad

  • 2 pcs apples, cored, diced
  • 3 pcs beets, peeled, diced to small
  • 1 pcs shallots, minced
  • 1 pcs lemon, juiced
  • 3 tbsp olive oil
  • 1 tsp honey
  • 1/4 tsp salt, fresh ground
  • 1 pinch black pepper, fresh ground
Preparation

  1. Toss the apples with shallots and lemon juice in a bowl.
  2. Add beets, honey, olive oil, salt, and pepper.
  3. Toss again to combine all.
  4. Place aside for 10 minutes before serving.

  • No cholesterol
  • Very high in vitamin B6
  • High in vitamin C

Note that if you wish to use raw, uncooked beets, you need to dice it smaller than usual. For vegan change honey to cane sugar.
