Blueberry donuts

  • 90 g blueberries, fresh
  • 1 tsp cinnamon, ground
  • 2 pcs egg whites
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3 tbsp applesauce
  • 2 tbsp milk
  • 2 1/2 tbsp whole-wheat flour
  • 70 g all purpose flour
  • 2 1/2 tbsp cane sugar
Preparation

  1. In a bowl, whisk flours, cinnamon, salt, baking powder, and sugar.
  2. In a separate bowl, whisk egg whites, milk, and apple sauce.
  3. Fold the wet ingredients in dry ones and stir until just smooth.
  4. Preheat oven to 160°C and prepare donut pan.
  5. Gently stir blueberries into batter and drop around 1 full tablespoon into donut pan.
  6. Bake donuts for 15-16 minutes or until firm to the touch.
  7. Serve while still hot, sprinkled with icing sugar.
