Candied ginger

  • 200 g ginger root, fresh, peeled, sliced to 0.5cm thick slices
  • 240 ml water
  • 240 g cane sugar
  • 100 g sugar to cover
Preparation

  1. Combine 240g of sugar and water in a saucepan then bring it to a boil.
  2. Add the ginger slices then let it simmer for 45 minutes, avoid burning.
  3. Drain the slices and while hot, place the ginger slices on a baking tray.
  4. Sprinkle sugar on top to cover the ginger then mix well to cover the slices fully.
  5. Let ginger rest for two days or until the ginger has hardened like candy.
  6. Remove from the sugar and place in an airtight container.
