Chicken with butter and lemon

  • 600 g chicken breast, boneless, skinned, sliced
  • 2 pinch salt
  • 2 pinch white pepper, ground
  • 1/2 pcs fresh lemon's juice
  • 1/2 tbsp thyme, fresh, chopped
  • 1/2 tbsp parsley, fresh, chopped
  • 1/2 tbsp chives, fresh, chopped
  • 50 g butter
Preparation

  1. Mix up the chicken with the spices.
  2. Put them into 4 bags and add one slice of butter to each
  3. Vacuum the bags
  4. Sous vide the meat for 30 minutes, 70⁰C
  5. Put the bags in iced water to cool down
  6. Take a non-stick pot on the stove. Heat it up to high temperature.
  7. Bake the chicken with the butter liquid on both sides about 2 minutes each.
