Classical Greek salad

  • 12 pcs small, ripe tomatoes, cut in quarters
  • 125 g kalamata olives, cut in halves and pitted
  • 2 pcs small cucumbers, halved and sliced crosswise
  • 2 pcs red onion, thinly sliced
  • 200 g feta cheese (Greek) packed in brine
  • 2 tbsp red wine vinegar
  • 2 tbsp extra virgin olive oil
  • 1/4 tsp oregano, dried
  • 1 pinch Salt
  • 1 pinch freshly ground black pepper

  1. In a medium bowl, whisk the vinegar, oregano, salt, and pepper.
  2. Slowly whisk in the olive oil. Toss in the olives, cucumbers, red onion, and the tomatoes.
  3. Serve the salad on four serving plates.
  4. Top the salads with feta (broken into smaller parts), a bit of olive oil, salt, and pepper.
