Colorful carrot salad

  • 150 g carrots, shredded
  • 100 g red cabbage, shredded
  • 1 pcs apple, chopped
  • 3 tbsp pine nuts, lightly toasted
  • 2 tbsp pumpkin seeds, toasted
  • 2 1/2 tbsp mayonnaise, home made
  • 2 tbsp cilantro, chopped
  • 1 tbsp capers, drained
  • 2 tsp white wine vinegar
  • 1/2 tsp salt, fresh ground
  • 1/4 tsp pepper, fresh ground
  • 1/4 tsp cumin, ground
  • 1/4 tsp cinnamon, ground
Preparation

  1. Whisk mayonnaise, vinegar, salt, cinnamon, and cumin in a large bowl.
  2. Add shredded carrots, red cabbage, apple, cilantro, capers, and pine nuts; toss to combine with the dressing.
  3. Season with pepper and serve sprinkled with the toasted pumpkin seeds.
