Cucumber salad with mint

  • 2 pcs cucumbers
  • 3 pcs tomatoes
  • 2 tbsp mint leaves
  • 3 tbsp lemon juice
  • 1 pinch salt

  1. Cut the cucumber into very small cubes (0.2mm wide each side).
  2. If you wish, salt it already to take the poisoned liquid away.
  3. Take out the inside of the tomatoes and cut them to the same size as the cucumbers.
  4. Mix the ingredients together in a big salad bowl.
  5. Let it rest for half an hour in the fridge before serving.
  6. Decorate with mint.

If you add some cooked couscous, I would suggest 1 cup cooked in 2 cups of water or chicken stock. Mixing it with the salad, you will have a nice tabbouleh.
