Eggs baked in tomato

  • 60 g parmesan, grated
  • 6 pcs tomatoes, large
  • 6 pcs eggs
  • 1 tsp basil, dried, crushed
  • 1/2 tsp fresh ground salt
  • 1/4 tsp freshly ground black pepper
Preparation

  1. Preheat oven to 200°C.
  2. Slice tops off tomatoes, and scoop out seeds and pulp.
  3. Place tomatoes in shallow baking dish, and sprinkle cavities with salt, pepper, and pinches of cheese.
  4. Crack one egg into each tomato.
  5. Sprinkle with salt, pepper, herbs, and remaining cheese.
  6. Bake 20 minutes for soft yolks, 30 to 35 minutes for hard yolks.
  7. Serve immediately.
