Brazilian side dish

  • 500 g tapioca flour
  • 4 clove garlic cloves, minced
  • 4 slice bacon, chopped into small pieces
  • 60 g parsley, fresh, chopped
  • 1 tsp fresh ground salt

  1. Cook bacon in large skillet, until golden brown for 5-6 minutes over medium-high heat.
  2. Meanwhile, sprinkle salt over garlic and smash into paste.
  3. Add garlic to bacon and cook for 2 more minutes.
  4. Lower heat and add manioc flour; stir constantly with spatula until it's golden, for 4 minutes.
  5. Stir in parsley and transfer to a bowl.
  6. Serve at room temperature.

NOTE: For vegetarian version, just skip bacon and add 1tbsp olive oil in skillet.
