Fast carrot cake

  • 1 pcs egg, slightly whisked
  • 1 pcs carrot, peeled and grated
  • 1 tbsp almond butter, unsalted
  • 1 tbsp honey
  • 1 tbsp coconut flour
  • 1 tbsp raisins
  • 1 tsp cinnamon, ground
  • 1/4 tsp baking soda
Preparation

  1. Preheat oven to 180°C and grease small baking dish with some grass-fed butter or almond butter.
  2. Place grated carrot in a medium bowl; add almond butter and egg.
  3. Whisk well until fluffy and combined.
  4. Add honey, cinnamon, salt, and baking soda.
  5. Stir in raisins and transfer the mixture to the greased dish.
  6. Bake for 20-25 minutes and leave on wire rack to cool.
  7. Slice before serving.
