Figs and apple chutney

  • 300 g figs, chopped
  • 220 g apples, peeled, cored and chopped small
  • 200 g cane sugar
  • 240 ml apple cider vinegar
  • 120 ml white vine
  • 120 g dried apricots, chopped
  • 1 1/2 tbsp sultanas
  • 1/2 pcs onion, chopped
  • 1 1/2 tbsp tomato paste
  • 1/2 tbsp yellow mustard seeds
  • 1/2 tsp cinnamon, ground
  • 1/4 tsp cardamom, ground
Preparation

  1. Combine all ingredients in a large heavy-based pan. Mixture should only fill 1/3 of the pan.
  2. Stir over low heat until the sugar has dissolved.
  3. Simmer uncovered on lowest heat setting for about 90 minutes or until mixture thickens, stirring from time to time.
  4. Spoon into hot sterilized jars or serve immediately.
