Grilled lamb with fruits

  • 1500 g lamb sirloin
  • 100 g prunes, pitted
  • 5 pcs apricots, halved, stoned
  • 4 pcs figs, trimmed, halved
  • 3 pcs celery stick, cut into 2cm pieces
  • 3 clove garlic, whole, peeled
  • 2 tsp rosemary, dried, crushed
  • 2 tsp thyme, dried, chopped
  • 3/4 tbsp salt, fresh ground
  • 1/2 tbsp pepper, fresh ground

  1. Place lamb meat in large pot then add salt, celery, garlic, and pepper; pour in enough water to cover.
  2. Place over medium-high heat and cook for 50 minutes; skim off if neccesary.
  3. Drain lamb meat and place in colander for 30 minutes so excess liquid is removed.
  4. Slice lamb meat in steaks, around 2.5cm thick.
  5. Preheat grill; place sliced steaks onto preheated grill then set around figs and apricots.
  6. Grill lamb and fruits for 4 minutes, per side.
  7. Serve on wide platter and top with prunes.
