Ham & Cheese Muffin

  • 150 g almond flour
  • 3 pcs eggs
  • 100 g mozzarella, grated
  • 50 g ham
  • 1 pcs shallot, chopped
  • 1 clove garlic, chopped
  • 1/2 tbsp parsley, fresh, chopped
  • 1/2 tbsp thyme, dried
  • 1 pinch salt
  • 1 pinch black pepper

  1. Take a metal muffin form of 12 and line it with the paper muffin forms.
  2. Heat up the oven for 180°C.
  3. Separate the eggs.
  4. Put the eggyolk, half of the cheese, and all the rest of the ingredients into the food processor and mix it up.
  5. Beat up the egg whites and add it to the dough slowly and gently.
  6. Split the dough in the forms.
  7. Put the rest of the cheese to the top of the muffins.
  8. Bake it for 18 minutes. It is ready when the muffins are baked all the way. Do the needle probe.
