Herring canapes

with grated beet

  • 2 pcs baguette, whole-wheat, sliced
  • 500 g herring, pickled
  • 2 pcs beets, raw, cleaned
  • 1 pcs white onion, peeled
  • 1 tbsp lemon juice
  • 1 pinch salt
  • 1 pinch freshly ground black pepper

  1. Grate the beets into a bowl then sprinkle with salt. Grate the onion then add to the beets. Add the lemon juice. Mix it then set aside at least for an hour to make the flavours blend.
  2. Before serving, stir the beet mixture again.
  3. Place the baguette slices onto a serving plate then spoon 3/4 tbsp grated beets onto each then top with a piece of herring.
  4. Sprinkle with freshly ground pepper and serve immediately.
