Honey and pepper roasted ribs

  • 2 pcs pork rib racks (12 each)
  • 80 ml apple cider vinegar
  • 180 ml honey
  • 2 tbsp cane
  • 3 tbsp Dijon mustard
  • 4 tbsp canola oil
  • 1000 ml water
  • 250 ml soy sauce
  • 1 pcs ginger root, peeled, grated
  • 3 pinch salt
  • 1 tsp freshly ground black pepper

  1. Place a small saucepan over medium heat and pour in the vinegar and sugar. Stir until all the sugar dissolves and cook for about 5 minutes. Turn off the heat and whisk in the mustard and honey. Set aside to allow cooling.
  2. Preheat oven to 250°C.
  3. Brush the ribs with canola oil on both sides and season with salt and pepper.
  4. Place a saucepan over medium-high heat and add the soy sauce, water, and ginger. Bring the mixture to a boil and pour it at the bottom of your roasting pan with a rack on top. Place the ribs on the rack then wrap up the pan with foil. Roast for 90 minutes until the ribs are tender.
  5. Transfer the cooked ribs to a baking sheet lined with parchment paper. Turn on the oven’s broiler for 5 minutes. Baste the ribs with the honey glaze and place under the broiler until it turns golden and forms a nice crust.
  6. Remove from oven and brush the ribs with some more glaze. Rest for about 10 minutes before slicing up the rack, serve immediately.
