Malaysian curry paste

  • 18 clove garlic
  • 4 pcs shallots, roughly chopped
  • 10 pcs kaffir lime leaves
  • 40 g turmeric, peeled and roughly chopped
  • 1 tbsp chopped lemon grass
  • 80 g galanga, peeled and roughly chopped galanga root
  • 1 pcs ginger root, 4cm, peeled and chopped
  • 5 pcs red birds eye chillis
Preparation

  1. Grind all the ingredients using a mortar and pestle or you can use a food processor instead, to make a paste that is almost smooth.
