Mashed potatoes with herbs

  • 900 g Yukon gold potatoes, peeled and cut into 2cm pieces
  • 100 g butter, unsalted
  • 200 ml half and half cream
  • 1 tbsp parsley, fresh, chopped
  • 1 tbsp chives, fresh, chopped
  • 1 tsp fresh ground salt

  1. Place potatoes in a large pot; cover with water, so water is 2cm over potatoes. Add half of salt.
  2. Bring to a boil; reduce heat to medium-low and simmer until potatoes are tender, 15 to 18 minutes.
  3. Drain well and return to pot.
  4. Heat potatoes over medium heat for 1 minute, to dry and remove.
  5. In a small saucepan, combine half-and-half and butter; bring to a simmer over medium heat.
  6. Pour mixture over potatoes. Mash just until smooth.
  7. Stir in herbs and add remaining salt.
  8. Garnish with more herbs and serve.
