Oven-baked fish fillet

  • 640 g cod fillets
  • 4 tsp olive oil
  • 2 pcs lemon, sliced to 0.5cm thick rounds
  • 2 sprig thyme, fresh
  • 2 pinch sea salt

  1. Preheat oven to 200°C.
  2. Lay four pieces of parchment paper - large enough for the fish - on working surface.
  3. Place the fish fillet in middle of each paper; drizzle each with olive oil; 1 teaspoon per fillet.
  4. Season with salt then top with lemon slices. Cut thyme sprig in half and place each half on top of the fish.
  5. Enclose the paper, folding both ends into the middle, then seal the ends by twisting the paper.
  6. Place the fish packets onto baking sheet and bake for 12-14 minutes. Open carefully and serve.
