Paleo pizza

  • 110 g tomato sauce
  • 100 g almond flour
  • 2 tbsp butter, room temperature
  • 2 pcs eggs, lightly whisked
  • 200 g pork sausage, pre-cooked, sliced in 0.25cm thick rounds
  • 1 pcs yellow bell pepper, cut into thin strips
  • 2 tbsp light Cheddar, grated
  • 1 tsp basil, dried, crushed
  • 1/2 tsp salt, fresh ground

  1. Preheat oven to 180°C then sprinkle pizza stone or baking tray with some almond flour.
  2. Combine salt, almond flour, eggs, and butter in a medium bowl. If needed, add some more almond flour until you get a nice and homogenous dough.
  3. Knead dough with hands and roll it out on a large piece of parchment paper to ¼-inch thick.
  4. Place in the oven and bake for 10 minutes and set on wire rack.
  5. Meanwhile, heat small skillet over medium-high heat and add sliced sausage.
  6. Cook for 1 minute and add diced pepper. Cook for 3 minutes and set aside.
  7. Spread tomato sauce over pizza crust then top with sausage and bell peppers.
  8. Sprinkle with cheese and basil then bake for 20 minutes.
  9. Remove from the oven and slice before serving.
