The base recipe

  • 265 g yellow corn flour
  • 1500 ml water
  • 3 tbsp butter
  • 1/2 tbsp salt

  1. Boil the water in a large, heavy saucepan.
  2. Add salt to the boiling water and slowly whisk in the corn flour.
  3. Turn down the heat to low until the mixture starts thickening and the cornmeal is tender, stirring frequently for about 15 minutes.
  4. Remove from heat and stir in the butter until melted.
