Pumpkin baked with cheese and grain mustard

  • 1800 g pumpkin, peeled and sliced
  • 100 g parmesan, grated
  • 50 g bread crumbs
  • 4 tbsp parsley, fresh, chopped
  • 3 tbsp grainy mustard
  • 2 tbsp olive oil

  1. Preheat oven to 180°C.
  2. Place pumpkin on a baking tray in a single layer then bake for 30-40 minutes, until tender. Transfer to a heat-proof serving dish.
  3. Mix together breadcrumbs, cheese, and parsley.
  4. Scatter over pumpkin and drizzle over oil. Place under grill for 5 minutes until crisp and golden.
  5. Serve with grain mustard.
