Pumpkin cookies

  • 190 g almond flour
  • 110 g pumpkin puree
  • 110 ml coconut oil, melted
  • 110 ml honey
  • 4 tbsp coconut, desiccated, unsweetened
  • 2 tsp pure vanilla
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon, ground
  • 1/4 tsp cloves, ground
  • 1/4 tsp nutmeg, ground
  • 1/4 tsp ginger, ground
Preparation

  1. Preheat oven to 180°C and line baking tray with parchment paper.
  2. Place all ingredients in a large bowl and stir to combine until smooth.
  3. Drop 2 tablespoons batter onto baking sheet and slightly flatten with back of the spoon.
  4. Bake for 30-35 minutes and leave on wire rack to cool.
  5. Sprinkle with a small pinch of cinnamon before serving.
