Quinoa salad with pear

  • 185 g quinoa
  • 1 pcs pear, sliced
  • 3 pcs small spring onions, chopped
  • 2 tbsp fresh cranberries
  • 300 ml water
  • 1 1/2 tbsp balsamic vinegar
  • 1 1/2 tbsp orange juice

  1. Combine the quinoa and water in a saucepan and bring to a boil. Lower the heat and simmer for 10 minutes, then drain and allow to cool.
  2. In a bowl, mix the balsamic vinegar with the orange juice and set aside. Add the sliced pear, cranberries, scallions to the balsamic mixture and toss well. Add in the quinoa and combine well. Sprinkle with the chopped nuts and serve.
