Radicchio with dates and honey

  • 2 head radicchio, fresh, cored and torn into bite-size pieces
  • 2 tbsp balsamic vinegar
  • 8 pcs dates, pitted
  • 80 g bacon
  • 1/2 tbsp olive oil
  • 1 tbsp honey, light
  • 1 pinch fresh ground salt
  • 1 pinch freshly ground black pepper
Preparation

  1. Rinse radicchio and tear into bite-sized pieces.
  2. Dice bacon and cook in large skilet, over medium-high heat until browned and crips; for 5-6 minutes.
  3. Discard fat and set bacon to drain on paper towels.
  4. Heat olive oil in separate skillet.
  5. Add radicchio and season with salt and pepper.
  6. Cook, tossing, until tender, about 4 minutes. Add vinegar, dates, bacon, and honey, then stir to combine.
  7. Serve while still hot.
