  • 1000 g pork ribs with bones
  • 1000 g lard
  • 4 pcs black peppercorns
  • 1 pcs bay leaf
  • 2 spear fresh thyme
  • 2 spear rosemary, fresh
  • 3 pcs peeled but whole shallots
  • 2 clove garlic
  • 1/2 tbsp sea salt

  1. Heat up the fat. You should choose a cooking pot which has a top and is half full with the oil.
  2. Add the spices and the meat.
  3. Heat up the whole dish 'til it is almost boiling.
  4. Take the stove onto the lowest temperature, cover the pot and cook the rillettes for 3-4 hours.
  5. Let it cool down 'til you have no problem in touching the meat.
  6. Take the meat out and take away the bones.
  7. Mash the meat with a fork
  8. Add the meat in small pots and if needed, still add some fat without spices.
