Roasted ham with brown glaze

  • 4300 g ham shank, smoked
  • 195 g cane sugar
  • 124 g Plum sauce
  • 230 ml apple juice
  • 85 ml honey
  • 20 pcs cloves, whole

  1. Preheat oven to 160°C and place ham in large roasting pan.
  2. Pour apple juice over ham. Cover ham completely with parchment paper, then cover ham and roasting pan completely with heavy-duty foil, sealing tightly at edges of pan.
  3. Bake ham, about 3 hours and 45 minutes or until inner temperature reaches 60°C.
  4. Remove ham from oven. Increase oven temperature to 180°C.
  5. Remove foil and parchment from ham. Drain and discard liquids from roasting pan.
  6. Cut off rind and all but 0.5cm thick layer of fat from ham then discard.
  7. Using a sharp knife, make diamond pattern, 2-3mm deep and stud with whole cloves, 1 clove per diamond.
  8. Spread plum sauce evenly over fat layer on ham.
  9. Drizzle honey evenly all over. Bake until ham is well glazed, spooning any plum glaze that slides into roasting pan back over ham, about 30 minutes.
  10. Transfer ham to serving platter; let cool for at least 45 minutes.
  11. Slice ham and serve slightly warm or at room temperature.
