Salmon soup

  • 500 g salmon, deboned, diced to 1,5cm
  • 3 pcs yellow potatoes, skinned, diced
  • 3 pcs carrots, pealed, sliced
  • 2 pcs parsley root, peeled, sliced
  • 1 pcs tomato
  • 1 pcs onion
  • 1 clove garlic, washed
  • 800 ml water
  • 2 tbsp canola oil
  • 1/2 tsp black peppercorns
  • 2 pcs cloves, whole
  • 1 pcs bay leaf
  • 3 sprig dill weed, fresh
  • 2 tsp salt
Preparation

  • Heat up oil in the soup pot.
  • Add carrots and parsnip, then cook for 5 minutes on medium-high heat.
  • Add all ingredients except fish and potato.
  • Add the water. Boil it up, cover it, and simmer the vegetables on low heat about 20 minutes.
  • Add fish and cook for 10 more minutes.
  • Add potato then cook for 20 minutes more.
  • Take out tomato, garlic, and onion before serving.
