Spicy grilled turkey

  • 4 1/2 kg turkey, whole, rinsed and patted
  • 75 ml olive oil
  • 1 tsp cayenne pepper, ground
  • 1 tbsp fresh ground salt
  • 1 tsp sweet red pepper flakes, crushed
  • 1 tbsp chili powder
  • 1 tbsp thyme, dried
Preparation

  1. Combine oil, salt, chili powder, cayenne pepper, and red pepper flakes, to make a paste.
  2. Rub over outside of turkey. Tie legs together with kitchen twine.
  3. Place turkey in baking dish.
  4. Prepare grill and ignite.
  5. Place turkey on center of rack over pan, then cover. Grill and try to maintain heat.
  6. Decrease oven temperature to 180°C. 
  7. Cook turkey for about 2 hours or until inserted thermomether reaches 75°C degrees.
  8. Cover with aluminum foil.
  9. Let stand for 30 minutes before carving.
  10. Serve.
