Sweet potato salsa

  • 450 g sweet potato, peeled and diced
  • 1 pcs red onion, diced small
  • 1 pcs avocado, diced small
  • 110 ml lime juice, fresh
  • 2 tbsp extra-virgin olive oil
  • 50 g coriander, fresh, chopped
  • 1 pcs tomato, diced small
  • 1 pinch fresh ground salt

  1. Preheat oven to 220°C and prepare baking sheet.
  2. In a large bowl, combine sweet potato, onion, and olive oil; toss to combine.
  3. Transfer to prepared baking sheet; bake for 20 minutes.
  4. Transfer baked potatoes and onions into a bowl and let cool completely.
  5. Season with lime juice and salt; add chopped tomato, cilantro, and avocado, then toss to combine.
  6. Serve in small bowls.
