Vegan mashed potatoes

  • 600 g potatoes, cooked, peeled, quartered
  • 1 1/4 tbsp soy milk, unsweetened
  • 100 ml coconut oil
  • 1 tbsp salt
  • 1 pinch nutmeg, ground

  1. Peal the potatoes and cut them into 2cm dices. Add water until it covers the potatoes. Add 1 tablespoon salt.
  2. Boil it up. Cover it and cook for about 15 minutes.
  3. Strain the potoes.
  4. Take the potoes off heat and mash them with a fork or a special potato masher.
  5. Add the coconut oil and mix it well.
  6. Add soy milk, only the amount you need, to get the nice creamy consistency.
  7. Spice it with the nutmeg and add salt if still needed.
