Wine soup

It's an unusual soup, served in certain countries for Christmas dinner. It has a traditional meaning of wealth.

  • 750 ml quality dry wine (white)
  • 4 pcs egg yolks
  • 50 ml water
  • 120 g cane sugar
  • 1 stick cinnamon, ground
  • 1 tsp lemon peel, grated
  • 5 pcs cloves, whole

  1. Mix the sugar and the egg yolks until it becomes white. You can use electric mixer.
  2. Boil up wine with the spices.
  3. Add water to the egg yolk mix.
  4. Add some warm wine step by step to the mix. Mix all of the wine and the egg mix.
  5. Heat the whole mixture up again, SLOWLY, then cook on very low heat, until the soup thickens again.
  6. Avoid overcooking the egg yolks.
  7. If your egg yolk gets lumpy the solution is to blend it together or use a colander to separate it from the soup.
