Zucchini lasagna

  • 450 g zucchinis, sliced lengthwise to 0.5cm thick
  • 220 g beef, minced
  • 200 g ricotta
  • 200 g tomato sauce
  • 100 g mozzarella, torn into pieces
  • 1 pcs egg, whole
  • 1 tbsp basil, fresh, chopped
  • 1/2 tbsp garlic, minced
  • 1/2 tbsp olive oil
  • 1/2 tsp salt, fresh ground
  • 1/4 tsp black pepper, fresh ground

  1. Preheat the oven to 180°C.
  2. Slice the zucchini lengthwise to get 6 slices out of each zucchini.
  3. Spray the zucchini slices with olive oil then sprinkle with 0.15 teaspoon salt, black pepper.
  4. Grill the slices in batches, 2-3 minutes on each side, or until golden and firm.
  5. Spread on clean kitchen towels to soak up more moisture.
  6. In a large skillet, heat the olive oil over medium-high heat, about 3 minutes. Add the meat, the minced garlic, and salt.
  7. Cook, stirring with a wooden spoon to break up the meat, until meat is browned, 5-7 minutes.
  8. Drain into a colander, then mix in a bowl with tomato sauce.
  9. In another bowl, with a fork, mix together the ricotta, eggs, basil, and the remaining salt and pepper.
  10. Assemble the lasagna: Spread some of the tomato sauce on the bottom of a baking dish; top the sauce with a layer of zucchini, then a third of the ricotta mixture, a third of the meat mixture, and a third of the mozzarella cheese.
  11. Repeat, arranging the zucchini slices in the opposite direction: zucchini, ⅓ ricotta, ⅓ meat mixture, ⅓ mozzarella.
  12. Repeat one last time, adding one extra layer of zucchini: zucchini, ricotta, meat mixture, more zucchini, and mozzarella. Bake, uncovered, until the cheese is golden, about 30 minutes. You can finish by broiling for 2 minutes on high to brown the cheese, if you wish.
  13. Place aside for 10 minutes before slicing and serving.
